Batch Gift: The Best Granola
I know I’ve posted this recipe before but wanted to remind you of it because it makes a great batch gift to accompany any of the other gifts I’ve posted recently, though feel free to give it on its own as well. It’s a nice edible gift that isn’t cookies and it’s the BEST granola recipe I have ever eaten. That’s the most important thing you need to know about it.
Here‘s the recipe (adapted from Jenny Rosentratch’s recipe in Bon Appetit “A Better Granola”)
The Best Granola (can fill 10-12 (8oz) jars)
1 large egg white, lightly beaten
3 cups old-fashioned oats
1.5 cups chopped nuts/seeds (I like almonds, pumpkin seeds not in shell, sunflower seeds, and pistachios)
1.5 cups coconut shavings
1/2 cups pure maple syrup
1/4 cup warmed coconut oil
2 tablespoons light brown sugar
1 teaspoon coarse kosher salt (if using table salt, use less)
1/2 teaspoon ground cinnamon
1 cup dried cranberries
Preheat oven to 300 degrees. Mix everything EXCEPT for the cranberries. Spread it all out on a rimmed baking sheet. Bake the granola 40-45 mins, until lightly toasted on top. Stir it after you take it out and leave it on the pan to cool. Stir in dried cranberries when it has cooled. Fill jars and gift away!
