From Scratch: Back Pocket Brownies

This brownie recipe has been in my family for a few decades. I grew up eating them and in my family they are called “Eve’s Brownies.” A few months ago I asked my grandma who Eve was, hoping she was a great great great great, etc. grandma and that I was carrying on a grand brownie tradition of many women in my family before me but nope! It was a little neighbor girl that lived nearby when my mom and her siblings were little. Almost wish I didn’t know that. Oh well. Now, I’m writing this as a less waste practice because it uses what you already have in your cupboards so when you remember the night before that you signed up to bring dessert to a work party/baby shower/wedding shower/new foster family/dinner party/pity party/etc. the next day, you can spend 5-7 hands-on minutes making it and avoid having to stop at the grocery in the morning on your way to said occasion to buy some pre-packaged baked good, and thus saving gas and waste. A heads up that there is no baking soda or powder and not a lot of flour in the recipe so it doesn’t rise much but when has that stopped anyone from gobbling a brownie? By the way, these are really tasty.

Back Pocket Brownies (or “The Brownies formerly known as Eve’s”)
-1 stick butter (melted)
-2 eggs
-1 cup sugar
-1/2 cup flour
-2 tbsp. cocoa
-1/2 tsp. salt
-1 tsp vanilla

Preheat oven to 350 degrees.Combine butter and eggs. In separate bowl mix dry ingredients. Combine wet with dry then add vanilla. Pour into a greased 8×8 pan and bake for 30 minutes.

When I make these at home for dinner guests (after realizing I forgot to plan for dessert), I serve with berries which are usually on hand since toddlers reside in this house.
